A delicious soup with smoky sausage, soft potatoes, and a creamy broth. Great for a warm dinner on a cold night!
List of ingredients:
For the Soup:
1 pound of kielbasa sausage, cut into circles.
1 onion of medium size, chopped
3 pieces of garlic, finely chopped
4 cups of chicken broth
4 cups of potatoes, peeled and cut into small pieces (around 3-4 medium potatoes)
2 carrots, cut into small pieces.
2 pieces of celery, cut into small pieces
1 teaspoon of dried thyme
1 teaspoon of smoked paprika, you can choose not to use it.
Add salt and pepper according to your preference.
1 cup of heavy cream or half-and-half (for a creamy texture)
1 cup of grated cheddar cheese (if desired, for decoration)
Fresh parsley, finely chopped (if desired, for decoration)
Steps:
Prepare the Kielbasa:
In a big pot or a large cooking pot, cook the sliced kielbasa on medium heat for 3-4 minutes until it starts to turn brown and releases some fat.
Take out the kielbasa from the pot and place it to the side.
Cook the vegetables in a pan with a little bit of oil.
Put the chopped onion, garlic, carrots, and celery in the pot.
Cook for around 5 minutes until the vegetables are soft and the onion turns see-through.
Include the soup and potatoes.
Put the chicken broth, chopped potatoes, dried thyme, smoked paprika (if you have it), and add salt and pepper to taste.
Heat until it starts to bubble, then lower the heat and cook for 15-20 minutes until the potatoes are soft.
Include the sausage and cream.
Once the potatoes are soft, put the cooked kielbasa back in the pot.
Add heavy cream or half-and-half for extra creaminess.
Keep cooking for another 5 minutes to warm up the dish and mix the flavors.
Complete and serve.
Try the food and add more seasoning if needed.
Put the soup in bowls and add shredded cheddar cheese and fresh parsley on top, if you like.
