Thai Coconut Curry Noodle Soup

This Thai-inspired soup is the ideal comfort food—warm, creamy, and full of powerful flavors—yet it’s both unique and simple to prepare.

What You Need: One tablespoon of vegetable oil

1 chopped onion and 2 minced garlic cloves

Red curry paste, 2–3 tablespoons (or more or less depending on your preference), 1 tablespoon of shredded fresh ginger

one 14-ounce can almond milk

4 cups of broth, either veggie or chicken

Soy sauce, if you’re a vegetarian, or 1 tablespoon of fish sauce

brown sugar, 1 tablespoon

Tofu, shrimp, or chicken cooked to a 2 cup consistency 1 cup of sliced mushrooms

1 finely sliced red bell pepper

one cup of spinach or bok choy

8 ounces of cooked rice noodles

Citrus juice from one lime

Chopped fresh cilantro (to top)

Sliced green onions (to use as a garnish)
